Unique problems in designing and testing probiotic foods

Probiotic foods have been consumed in various parts of the world for many centuries. Foods that are fermented by bacteria and yeasts have many unique properties. Probiotic foods may also be functional foods, when they contain ingredients that are good for human health. There are already many probiotic foods on the market, and food manufacturers are looking to develop more.
