A review of various websites providing information on emulsifiers and stabilizers used in the food industry is presented.
CyberColloids

CyberColloids provides research, development, processing, and sales and marketing services for the hydrocolloids industry. Their website provides details of the services offered and how to subscribe to membership of CyberColloids. Members receive a quarterly technical review devoted to hydrocolloid technology and access to the password protected section of the website which includes on-line patent and other literature information regarding hydrocolloids. The library area of the site, which may be accessed free of charge, contains information on the chemistry, manufacture and applications of alginates and carrageenans and cites EC "E" numbers for hydrocolloids. The website also includes a number of relevant news items.

The website for Gum Technology, a supplier of gums and stabilizers for the food industry, provides information about the company and the products and services it offers; a free product sample may be requested by qualified industry professionals only. In addition, stabilizers and their functions are defined and their properties and food applications are given together with practical advice on using gum stabilizers. A web page is dedicated to consumers, and contains information about gums, including sources, applications, safety and nutritional value.

The webpages forming this vegetable gums, hydrocolloids site are part of the Food Resource website created by Oregon State University and provide both scientific and business information for the food industry. Information is provided on 13 gums, including carrageenan, agar and alginates, particularly their sources, uses, composition and solubility, and references are provided for some of the gums. The site also includes a comparison of specific chemical and physical properties of the gums, including viscosity, gelling, swelling and emulsifying properties. A few links to suppliers of gums are provided as is a FAQ section.
